 Coca-Cola Glaze

When I shot my first black bear 15 years ago, my family wasn’t sure how they felt about it. Since then, this recipe has become a family favorite, and they’re now excited when more Bear meat makes it to our Meat locker! The Coca-Cola glaze is the perfect sweet compliment to this Earthy and Spiced Rubbed Bear!

Servings - 8
Method - Stove Top/Oven
Prep time - 15 min
Cook time - 1 hour

Bear Loin 4# bear loin, whole and clean

Coffee Rub

½ C Ground Coffee
½ C Chili Powder
¼ C Kosher Salt
1 T Onion Powder
1 T Garlic Powder
1 T Ground Cumin
1 T smoked Paprika
1 T Ground Black Pepper
1 T Oregano

Coca Cola Glaze

1-½ T Olive oil
1 T Fresh Ginger, minced
1 T Fresh Garlic, minced
8 oz Coca Cola
½ C Beef Broth
1 T Soy
1 T Apple Cider Vinegar
1 Tsp Ground Mustard
3 T Brown Sugar
1 T Corn Starch
1 T Water
Salt & Pepper to taste

Preparation


The Coffee Rub
Mix all ingredients together, and rub all over bear loin. (this rub can be used on any red meat, grilled, smoked or sautéed).

The Bear Loin
1. Preheat oven to 400°F
2. Pour olive oil oil into large skillet and preheat on high.
3. Add meat and sear on all sides.
4. Place meat on sheet tray, then place in 400° oven.
5. Bake until meat reaches a core temp of 155°F.
6. Remove from oven and let rest for 10 to 15 minutes.
7. Serve with Coca-Cola Glaze.

The Coca-Cola Glaze
1. Heat olive oil and small sauce pan on low to medium heat. Add ginger and garlic and
sauté for two minutes till soft.
2. Add soy sauce, apple cider vinegar, ground mustard, and brown sugar. Simmer for
another 10 minutes on medium heat.
3. Combine cornstarch and water to make a slurry and silly add to boiling mixture to
thicken.
4. Dip a spoon into the sauce, if the sauce remains on the back of spoon, you have
reached his desired thickness.
5. You may add more corn, starch and water slurry until desired thickness is reached.
Glaze will thicken as it cools.
6. Add salt and pepper to taste.
